What About the Pie Plate?

Your pan material can also affect shrinkage:

Glass or ceramic pie plates heat gradually and evenly, giving the fat time to melt slowly and create flaky layers. They’re generally better for preventing shrinkage because the dough doesn’t seize from sudden heat.

Metal pie plates conduct heat faster, which can cause the fat to melt too quickly before the structure sets. If you use metal, make sure your dough is thoroughly chilled before it goes in.
